Sunday Recipe: Apple Muffins

Here’s a dangerous piece of information: muffins are criminally easy to make. And I promise that an apple muffin per day will NOT keep the doctor away.

But with that being said: here is my favourite apple muffin recipe!

Preheat oven to 400F and line a 12-muffin tray.

Blend together dry ingredients: 1.5 cups flower, 3/4 cup sugar, 1/2 tsp salt, 2tsp baking powder, and 1tsp ground cinnamon.

Add: 1 egg, 1/3 cup vegetable oil, and 1/3 cup milk.

Peel and dice 2 apples, and fold into the batter.

Fill the muffin liners with the batter.

Melt 1/4 cup butter and combine with 1tsp cinnamon and 1/4 cup brown sugar. Add the brown sugar mixture generously over the muffins.

Bake for 20 – 25 minutes.
