Preheat the oven to 350F and line an 8-inch pan with parchment.
Melt 7oz semi-sweet chocolate with 1/2 cup butter and 3tbsp canola oil in a double boiler.
Whisk into the mixture 1 cup brown sugar and 1 cup white sugar followed by 3 eggs mixed in one at a time.
In a separate bowl, mix together 1 cup flower, 1/2tsp salt, and 1/4tsp baking powder. Gradually combine this mixture into the chocolate mixture. If you want them to be EXTRA good, add a cup of chocolate chunks.
Pour into the pan, and bake for approximately 40 – 45 minutes. This recipe won’t get fully cake-y, but the brownies should be fully puffed up, separated from the sides of the pan, and it shouldn’t be wobbly in the pan. Let the brownies sit on the counter for at least 20 minutes before removing from the pan. To cut, you might want to consider coating the knife with Pam / oil.
