Sunday Recipe: Wafer Cake

This cake is probably the easiest, most versatile, and least caloric dessert recipe I’ll ever post. It’s the perfect weeknight recipe.

All you really need is: cool whip and chocolate wafers

It can be adapted in 100 different ways: choose a mould of basically any shape or size, mix the cool whip with anything from peanut butter to raspberries or trade it for some chocolate mousse, and top it any way you like whether take sprinkle, melted, or moulded form – use your imagination!

To get to the cake pictured, I lined the base of a springform pan with saran wrap, iced two packages worth of chocolate wafer with 2 containers worth of cool whip, placing them in concentric circles, icing the top with more cool whip, refrigerating for 24 hours to allow the wafers to saturate and become soft, and sift cocoa on top.
