This recipe is from Kitchn, and it is the most reliable cut-out sugar cookie recipe I’ve ever tried. And I’ve tried A LOT.
It’s the perfect Christmas eve / Christmas day family activity, because it is fun for the whole family to make and to decorate, and it’s mega-delicious.
Using a stand mixer or hand mixer, cream together 2oz of cream cheese, 1 cup of butter and 1 cup of sugar. Beat in 1 egg, 1 teaspoon vanilla, and the zest of half a lemon.
Mix 3 cups flour, 1.5 teaspoons baking powder, and 1/2 teaspoon salt in a separate bowl then gradually add to the butter/ sugar mixture until fully incorporated.
Create 2 logs of dough, wrap in parchment paper, and refrigerate for at least an hour before cutting out shapes on a floured surface.
Bake at 350F for 8-12 minutes.
Some of the cookies shown in the picture above have candy glass in them. To make candy glass, smash some jolly ranchers in ziploc bags and place in cutouts, and bake as usual. It’s that easy!
